Mexican Rice

My Adaptations

I add beans, to make it more meal-like, not just a side dish. I don't bother measuring out the onion or pepper. And I use vegetable broth to make it vegetarian.

In a heavy skillet sauté onion, green bell pepper and garlic until onion is softened. Add rice to skillet and cook over medium-high heat until rice has browned. Add tomatoes, chili powder, salt, and broth. Bring to a boil; cover, lower heat, and simmer until liquid has been absorbed, about 20 minutes. With 5 minutes left in the cooking, add the beans. Taste and add more salt if needed.
